Ubi mentah kaya akan karbohidrat kompleks, serat makanan dan beta-karoten (karotenoid provitamin A), serta mengandung kadar mikronutrien yang seimbang.
Dengan banyaknya kandungan yang ada di dalam ubi (termasuk ubi ungu), tidak mengherankan jika umbi-umbian yang satu ini pun kaya akan manfaat yang berguna untuk tubuh.

Seperti resep Candil Ubi Ungu dari Kahla Nafieza
Bahan:
*500 gr ubi ungu: kupas, kukus, haluskan.
*150 gr tepung tapioka
*sedikit garam
*air untuk merebus
*daun pandan
Saus santan:
*1000 ml santan
*200 gr gula pasir
*sedikit garam
*vanilli
*2 sdm tepung tapioka
Cara buat:
Campur ubi halus, garam dan tepung tapioka. Uleni.
Bila adonan kering, tambahkan air sedikit sedikit sampai adonan bisa di bentuk.
Ambil sejumput adonan, bentuk bulat.
Lakukan sampai adonan habis.
Rebus air bersama daun pandan, setelah mendidih masukan bulatan ubi / candil sedikit sedikit.
Rebus candil sampai mengapung, angkat.
Saus santan:
Campur semua bahan, aduk rata sampai halus.
Masak di atas api sedang sambil di aduk sampai mendidih.
Sajikan candil ubi ungu dengan saus santan
